Happy belated Valentines! I hope you had a great day surrounded by your loved ones :)

For the holiday, single me didn't have specific plans. I did bake some delicious heart shaped cookies for my family to enjoy! I don't know about you, but funfetti makes everything more yummy. I made a sugar cookie dough and just dumped a bunch of nonpareils on top. Isn't it healthier to eat all the colors of the rainbow? Something like that. 




Funfetti Sugar Cookies

1 stick butter, softened
1 cup sugar
1 egg
1 tsp vanilla extract
2 cups flour
1/2 tsp baking soda
1/4 tsp salt
3 Tbsp nonpareils or other sprinkles

Preheat oven to 365F

In a medium mixing bowl, beat together the butter and sugar until well incorporated and creamy. Add the egg and vanilla extract and mix to combine. 

Sift together the flour, baking soda, and salt. Add half of the flour mixture to the butter mixture and stir to combine. Add the rest of the flour and mix until you get a homogenous dough. Cover and chill the dough for at least 15 minutes. 

Gather the chilled cookie dough in a ball and sprinkle it evenly with the nonpareils, gently pressing them in so they stick. On a lightly floured surface, roll out the dough to about 1/3 inch thickness. Cut out with a heart shape or any shape you desire and place on a greased baking sheet 1 inch apart. 

Bake cookies for 7-8 minutes. They should be getting barely golden on the bottom. Cool and enjoy with your loved ones <3
