The weather is cooling down, and that means I am drinking a lot of hot tea :) I usually have a cup mid-morning, with a snack or post-workout meal. My favorites are English Breakfast and chai with a splash of vanilla soy milk. Chai is perfect for the fall, with the warm, fragrant spices.

For some nibbles, I made shortbread flavored with chai tea and vanilla, which makes for a perfect pairing.





Vanilla Chai Tea Shortbread

1 stick butter, room temp
1/2 cup sugar
1 1/2 cup flour
1/4 tsp salt
1 tsp vanilla extract
1 chai tea bag

Beat the butter and sugar together until smooth. Add the flour, salt, vanilla, and the contents of the tea bag. Mix until dough comes together. On a large piece of plastic wrap, dump the shortbread dough and shape into a long skinny log, about 2 inches in diameter. Wrap completely and place in the freezer for about 15 minutes.

Preheat oven to 350F. 

Remove dough from freezer and unwrap. Slice the dough into 1/2 inch thick rounds and place on a cookie sheet 1 inch apart. Bake for about 8 minutes. Cool completely and enjoy with a cup of tea :)
