And the pumpkin craze continues! Today I will share my recipe for Pumpkin Spice Granola, with pumpkin, delicious spices, and pumpkin seeds for an added crunch. Just warning you, this stuff is really addictive!

This recipe is vegan, and you can also make this recipe gluten-free by using gluten-free oats.








You will need:

2 cups oats
1/2 cup pumpkin puree
1/4 cup oil (I like to use coconut oil)
1/4 agave nectar (or maple syrup, brown rice syrup, honey, etc.)
2 tsp pumpkin pie spice
1/4 tsp salt
1/2 cup pumpkin seeds

Preheat the oven to 300F

In a mixing bowl, combine all the ingredients until the oats are thoroughly coated. Spread evenly on a baking sheet and bake for 50-60 minutes, stirring every 15 minutes, or until the granola is lightly toasted. Cool completely before storing in an airtight container.

Enjoy with some yogurt, milk, as a froyo topping, or just by the handful!
